I currently use Courier at my place of employment, but only the IMAP portion 
of it. I like it, it works.

However, I'd recommend looking at Cyrus as well 
(http://asg.web.cmu.edu/cyrus/imapd/) which I actually prefer, but for a few 
reasons was unable to use it at work.
