It depends on the network topology, the bandwidth,
and the requirements for accuracy that you have.
In a nutshell:
* topology: whether it's a single LAN or more, whether there are routers
and/or switches between them, etc.; it all matters
(of course, on a more basic level, whether it's Ethernet
or something else, like ATM, Token Ring, etc.)
* bandwidth: as you move towards a situation where you have your 300 hosts
each with one (or more) Gigabit ethernet interfaces, and using
a large fraction of this bandwidth, the choice of available tools
gets limited pretty quickly.
* accuracy requirements: there are solution based on traffic sampling
that might (or might not) be godd enough for you. If not,
there are solutions based on traffic mirroring (but this depends
on the rest of the factors, as well).
Therefore, to give any recommendation, more info is needed.
