I haven't used any of these, but it looks like there are a fair number:

- 1videoConference — Open Source, P2P, Web2.0 and VoIP multipoint
audio, video, text conferencing platform
- Asterisk — Telephony and VoIP server
- CaminoTalks -- cross platform videoconferencing system
- Ekiga — Video conferencing application for GNOME
- FreePBX — Front-end and advanced PBX configuration for Asterisk
- ivs - Inria video conferencing system
- OpenH323
- SIP Communicator— Java VoIP and Instant Messaging client
- sipX — SIP Communications Server
- Speak Freely — Internet voice chat
- vic - original UCB/LBNL video conferencing tool
- Wengophone — Free Voice, Video and IM client application

I just set up an internal ejabberd server @ work to facilitate
internal communications. No voice or video, but folks can talk back
and forth and it'll store offline messages.

YMMV,
